Albariño is a variety of white wine grapes grown in Galicia, Spain. They are used to make varietal white wines and are known for their distinctive botanical aroma, suggesting hints of apricot or peach. The wine produced from Albariño grapes is unusually light, and generally high in acidity with alcohol levels of 11.5–12.5%. The classic dish to pair with Albariño is pulpo, or octopus. Other good pairings are grilled or spicy fish, shellfish, and mussels.
